Hello, my name is Olga Lucia Orozco, a woman who loves Colombian cuisine. Since I was a child I have always been fascinated with preparing various dishes at home, I always used to look for recipes in books to prepare them, although nowadays it is very common to use the internet to search for all kinds of things, in my childhood I did not have access to it.
But well, there were many and many books with hundreds of recipes that I studied, but don’t think it was just the books, my mother has been the one who has taught me the most in the kitchen, she was my teacher, as I imagine it has been for most of women and men; without ruling out the grandmothers. Among them, two, mother and grandmother, are the ones who have been in charge of transmitting the entire essence of the kitchen to each one of us.
That is why the kitchen is so unique and special, since there may be thousands of books, but each recipe has a special touch, the special touch of home, the special touch of mom or the special touch of grandmother.
What I love most about Colombian cuisine
Without a doubt, the great diversity of dishes in our kitchen is what I love the most, but as I said before, the way of preparing each dish is different and you can add the number of ingredients you want or have on hand. For example, a sancocho, whether it is beef, pork, chicken, or fish, is not sancocho if it does not have one of these meats, in addition to cassava, potatoes, and plantains.
But for the rest it is you who decides to add your own seasoning, you decide if you add carrot, corn on the cob, onion, tomato, paprika, etc … Ideally, it should contain each of these things, but if at any given time it does not you have the ear of corn, just as it will be delicious.
